I’ll eat my Tuscan Chicken, louder than the lettuce leaves!

A wooden table with a red and white checkered cloth, text reads “Going for seconds—a food blog written by the staff at Blue Mountain Christian Retreat Center.” The “O” in “Going” is a plate and utensils, reflecting our christian retreat community.

A white plate with creamy chicken, pasta with vegetables, steamed broccoli, and a garlic breadstick—perfectly arranged for a wholesome meal at a christian retreat, set against a light background.

I’ve never been to Tuscany, but one bite of Tuscan Chicken and I’m strolling through the art-filled halls of Florence and tilting my neck in Pisa to view a leaning tower. The creamy white sauce coats the pan-seared chicken and fettuccine for an Italian comfort food sensation. The leafy green spinach fills my superfood quota for the day and adds a colorful flare, while the bits of sun-dried tomatoes add fireworks of flavor.

When I spy this palate-pleasing and aesthetically lovely dish is coming up on the menu, I can’t help but thank the Lord for a delicious taste of Italy.

I’ll eat my Tuscan Chicken,in the presence of my enemies (salad bar), I’ll eat my Tuscan Chicken, louder than the lettuce leaves!
